So my parents have planted an overabundance of tomatoes in the yard and I've been getting a little tired of all the variations of tomato soup. Figured making pasta sauce completely from scratch would be a good way to use up some, since reduction gets rid of most of the mass. Ended up using maybe 2-3lbs worth of tomatoes to make about 5 servings of sauce. Thought I would also make some notes here for the next time I made it.

1. Ground meat

Was too conservative with the amount of minced ginger, could add a lot more next time. Also could add an egg, and probably some liquid/water before cooking, to make it easier to break up and not clump together so much. Probably more soy sauce as well.

2. Blanching & peeling tomatoes

Should cut out the black bits where the stem connects before steaming, instead of trying to dig it out while hot.

3. Reduction

Rate of reduction is much faster with a pan rather than in the soup pot, possibly due to larger surface area; also less splatter. However, it feels like it's easier to mush up the peeled tomatoes in the pot than in the pan. So probably still a good idea to initially start off in the pot, and then move to the pan after everything liquifies.

4. Spices

If the "soup" will be moved to the pan earlier, it's probably better to cook some minced garlic/onion with olive oil, before adding the tomato liquid. Next time can maybe try brown sugar or honey instead of white sugar to balance the sourness.

5. Other

Noted that the initial servings taken right off the stove still felt somewhat more sour and watery than store-bought marinara. However the leftovers that were reheated for dinner had almost the same taste & consistency as store-bought. Guess maybe the cooling process is doing something with the acidity? Maybe next time could try making the pure sauce part the night before, and then stir fry some shrimp/veggies with it the next day.

Ugh, why is my internet connection so slow... Took forever to upload just two albums onto Facebook, and that's just the stuff from Taipei. >_< Plus, the flash version of the uploader up and quit on me. Bleh.

Spring!

Here's our front yard, after much reworking. (I footed the bill for the plants to avoid having to actually do the work planting them. :P) It looks especially nice due to the long extended rainy season we've been having over here.

This morning, finally got the desk all finished and my junk sorted into the drawers/shelves. Am now posting from my desktop PC. ^_^

Furniture stuff still on the list to get/do:
- Have one more bookshelf to put up. Need to make a run to Lowes
- New mattress
- Need a trash can for the room. Also a recycling bin, maybe
- Need more file folders for the cabinet
- Laundry bag holder...thing, since I don't want to keep running downstairs to drop off dirty laundry every time.
- Need to decide what goes in between the shelves at the back wall... CD-rack? Small futon couch? Bean bag? Table? Low cabinet? Suggestions welcome...
- Given the larger desk surface, I'm pondering whether to go for a dual monitor setup. (Yes this is just an excuse to get a larger monitor *cough*)
- Room freshener. Apparently the scent of anything that gets cooked in the kitchen drifts up the stairway and smack dab into the bedrooms. -_-

Seaworld is like Marine world, in that there are shows with the animals performing tricks at set times, and there are a few water rides. I didn't do any of the rides since I can get that at Great America. I did attend the shows for the dolphins, seals, and orca and took some videos of the show segments.

Aside from the shows there's also a few aquariums, which was difficult to take pictures in as well due to the dark lighting and the fact that digital cameras can't seem to focus very well through glass onto small objects.

We were able to get to the zoo at about 1 PM and stayed until it closed at 5. Unfortunately, during the last two hours, a lot of the animals (mostly the mammals) all went to sleep, so it was difficult if not impossible to get pictures of some of them (like the polar bears, the grizzly, the red panda, etc.)

I did however get an inordinate number of monkey photos, largely cuz we got lost around the area of the monkey trails and spent maybe an hour getting back on track. -_-

Friday morning we visited the San Diego Wild Animal Park. Due to constraints on time (we also planned to hit the zoo in the afternoon), distance, and energy, we didn't do the Into Africa Tour, which is retrospect is kind of sucked. We did get to see the rest of the exhibits that we could walk to however.
